What you'll need:
Red onion (I usually do 1 or 2 at a time)
Glass jar (Mason jar or large pyrex)
Apple cider vinegar
Water
Optional: caraway seeds (for flavor)
Instructions:
Thinly chop onions and place in glass storage
Cover with 3 parts apple cider vinegar & 1 parts water
Place 1 tbsp caraway seeds if desired and mix in
Cover and seal and leave in fridge for 24 hours before use, store up to 2 weeks
You can reuse brine a couple of times!

Salads
Eggs
Sandwiches
Rice bowls
Burgers
Burritos/tacos
